Study on the Antioxidant Mechanism of Dihydromyricetin by 1H Nuclear Magnetic Resonance

Abstract

The relative content of tertiary hydrogens in the molecules after the heating of glycerol trioleate with dihydromyricetin (DMY) was studied by 1H nuclear magnetic resonance (NMR) spectroscopy. Additionally, the changes in the hydroxyl groups of DMY molecules after mixing and heating the DMY with the initiator were investigated. The mechanism of antioxidation of DMY molecules was analysed based on the structure of DMY. The results showed DMY has a protective effect on the tertiary hydrogen group of the molecule, the active antioxidant sites of DMY are located on the three adjacent hydroxyl groups of the B-ring in the molecule.
